What is Bilona Ghee?
Bilona Ghee is the purest and most traditional form of ghee prepared according to ancient Ayurvedic practices. Unlike commercial ghee made directly from cream, Bilona Ghee is made from fresh whole Gir cow milk, which is first converted into curd, then churned into butter, and finally slow-cooked into golden ghee. This traditional process is time-consuming, labor-intensive, and requires significantly more milk, but it produces authentic ghee with a rich aroma, granular texture, and traditional flavor.
The Traditional Bilona Process of KMPORGANIC Gir Cow Ghee
Step 1 – Fresh Milk Collection
The journey begins with fresh milk collected from healthy indigenous Gir cows.
- Fresh milk is collected hygienically.
- Only whole milk is used.
- No cream separation.
- No milk powder or additives.
Result: Pure, nutrient-rich milk becomes the foundation of authentic Bilona Ghee.
Step 2 – Boiling the Milk
Fresh milk is gently boiled.
This process:
- Removes harmful microorganisms.
- Improves shelf life.
- Preserves the natural nutrients of the milk.
The milk is then allowed to cool naturally.
Step 3 – Natural Curd Formation
Once cooled to the proper temperature, a natural curd culture is added.
The milk is left undisturbed for 8–12 hours until it becomes thick curd (Dahi).
This is the most important stage because:
Bilona Ghee is always made from curd—not cream.
This natural fermentation develops the characteristic flavor associated with traditional Bilona ghee.
Step 4 – Traditional Bilona Churning
The curd is churned using a traditional wooden churner called a Bilona.
The churning is done slowly in clockwise and anti-clockwise directions.
This separates:
- White Butter (Makhan)
- Buttermilk (Chaas)
No high-speed industrial machines are used.
The remaining buttermilk is nutritious and can be consumed separately.
Step 5 – Collecting Fresh Butter
Fresh white butter is carefully collected.
The butter is washed gently with clean water to remove traces of buttermilk.
This improves the purity and shelf stability of the final ghee.
Step 6 – Slow Heating Process
The butter is heated slowly over a low flame.
During this stage:
- Water gradually evaporates.
- Milk solids settle.
- Natural caramelization develops.
- The butter transforms into golden ghee.
Slow heating helps create the rich aroma and characteristic flavor of Bilona Ghee.
Step 7 – Natural Filtration
The freshly prepared ghee is filtered to remove the browned milk solids.

Step 8 – Hygienic Packaging
The ghee is allowed to cool naturally before being packed in food-grade jars under hygienic conditions to preserve freshness and quality.
